A Certified Legal Nurse Consultant recently shared that she cut back on processed carbs to lose weight and was pleasantly surprised to find how much sharper her mind was. Suddenly that complex medical malpractice case wasn’t so complex after all. Her memory and recall for the facts in a large volume of cases are heightened. And best of all, she no longer has afternoon slumps. Oh yes – the money she’s saving on Einstein’s bagels and Jimmy John’s sandwiches are putting some extra cash in her pocket too.
It came as no surprise to me that she loves the way she feels and accomplishes much more each day in her CLNC® business with new clarity and energy. Cutting out processed carbs has been my routine for decades. It doesn’t make me a “carb-Nazi.” I enjoy hot Italian bread and beignets when I’m visiting New Orleans and I ate pasta at least twice a day when I was in Italy this summer – but that’s vacation, not daily life.
During the week, I want and need to be as sharp as possible. Running my legal nurse consulting education company and handling the stress of 20 employees demands that I am on top of my game. If I start the day out with a serious case of “bagel brain” it’s all downhill and I don’t have a shot.

Not only did I cut out carbs, but processed food as well resulting in a 17 pound weight loss and loads of energy. I too love the occasional pizza and junk food but its a treat.

“Processed” is the key word here. I grind my own grains and make all our bread products out of fresh whole grain flour. The health benefits of whole grains are astounding! Vickie, you would love my fresh whole grain pasta!
